Chocolate croissants

I am going to put a link to the YouTube video that I watched about 10 times. Here are the notes that I took from the video and his recipe. You'll definitely want to watch it. These notes may not make sense.

I made two batches of dough. I cut and baked one the day before recipe club and let the other batch rest in the fridge overnight. The one I let sit overnight definitely made a better croissant. The extra 24 hours made a big difference.

This is the link for the dough and plain croissants

Here is the tutorial for the chocolate ones.

Valentine Eclair

Here is the link to the recipe I used to make these Eclairs. All the pictures recipe and video tutorial are on her blog
Not going to lie... I dirtied every dish in my house and they were very time consuming. However they were yummy and fun to make.
I may consider making them for a special occasion again but I can totally see why these babies cost so much when you purchase them from the bakery!! Worth every penny.

Chocolate Zucchini Cake

Chocolate Zucchini Cake
Preheat oven to 325.

½ cup margarine
½ cup vegetable oil
1 ¾ cups sugar
2 eggs
1 teaspoon vanilla
½ cup sour milk
2 ½ cup flour
4 Tablespoons cocoa
½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon cloves
2 cups grated zucchini
¼ cup chocolate chips

Pour cake batter into greased and floured 9x13 pan (or Bundt pan). Bake for 40-45 minutes at 325.

Serve with drizzled chocolate sauce, whipped cream, sprinkled powdered sugar, or plain. Freezes well.

For the snowman topper, I microwaved large marshmallows for about 20 seconds then used half a mini peppermint pattie and 1/2 a hershey nugget for the top hat - stuck those together by holding the nugget on a pan just enough to melt the bottom a bit. I also used orange tootie fruities for the nose (microwaved a few seconds to soften, then shaped - starbursts would also work). Mini chocolate chips for the eyes.

Brown Butter Cinnamon Crinkle Cookies.

This cookie reminds me of an snicker-doodle on steroids. The brown butter elevates this cookie to the next level! They are simple to make and I always have these ingredients on hand in a pinch.

This recipe will yield 2 dozen cookies... if you can refrain from eating the batter!

Ingredients:

10 Tbs Salted Butter
1 cup Granulated Sugar
1/4 cup Brown Sugar
2 Eggs
1 tsp Vanilla
2 1/2 cups Flour
1 tsp Cinnamon
1 tsp Salt
1 tsp Baking Powder

1/2 cup powdered sugar to roll cookie dough in before baking

Preheat Oven to 350 degrees.

Melt your butter in a saucepan and begin to brown the butter over medium heat. It will turn from this pale yellow to a white frothy foam. As it browns it will have a wonderful nutty aroma. The butter will puff up high so I always use an over-sized pan to avoid a mess. The butter under the foam will be a caramel color when it is browned.

Let your butter come to room temperature. I am impatient and throw it in the freezer while I gather my other ingredients. You don't want it to be solid just barely warm. If it is too warm or hot it will result in flat cookies.

Once the butter cools add it to your sugars and beat together in your mixer for 2 minutes. Then add eggs and vanilla until just combined.
Add all your dry ingredients and only mix until just combined.

Roll the cookies into balls then in powdered sugar. 12 cookies per cookie sheet. Line you pans with parchment or silicone mats.

I gently press them down with my fingers before baking.

Bake at 350 degrees for 10 minutes. They will seem a bit doughy when you pull them out.

Let cool completely to allow them to set up.

Winger's asphalt pie copycat

1 regular package of Oreos
1/4 cup melted butter
1 pint of mint chocolate chip ice cream
salted caramel topping
Whipped cream

Use a Ziploc bag to crush 20 Oreos. Drizzle  melted butter in the ziplock bag until combined with crushed Oreos. Pour contents into a pie dish and pack down on the bottom only and not up the sides. Let ice cream soften enough so that it's easy to work with. Spoon on top of crust and spread it evenly.
Immediately cover and put pie into the freezer for a minimum of 3 hours before serving. Preferably overnight.
Top the pie with whipped cream caramel sauce and remaining Oreos.

  4. Preheat oven to 350 degrees.
  5. Place pecans in oven and toast.
  6. In a small saucepan add toasted pecans, sugar and water.
  7. Over medium high heat, bring sugar mixture to a boil, reduce heat and cook until the syrup thickens, the pecans are fully coated and most of the moisture is absorbed.
  8. Pour pecans onto a piece of parchment paper to cool.
  9. When cooled, decorate the top of the cheesecake.
  10. Store in refrigerator.

NOTE: TAKE THE CHEESECAKE OUT OF THE REFRIGERATOR 30 MINUTES BEFORE SLICING!

Pumpkin Cheesecake Bars

PUMPKIN CHEESECAKE BARS

CRUST
1 1/2 cups graham crackers crumbs
1/4 cup melted butter

FILLING
4 packages (8 oz. each) cream cheese, softened
1 1/2 cups sugar
4 eggs
1 cup (8 oz.) canned pumpkin
2 tsp. pumpkin pie spice

GARNISH
whipped cream
pumpkin pie spice

**Preheat oven to 300 degrees

Line a 13x9 baking pan with parchment paper leaving about 1 inch of paper hanging on the sides.  In a medium size bowl, combine the graham cracker crumbs with the melted butter.  With your fingers, press the crust on the bottom of the prepared pan.  Set aside while making the filling.  In the mixing bowl of your stand-up mixer, add the cream cheese and sugar.  With the paddle attachment on, beat on low speed until light and fluffy.  Beat in eggs, one at a time, just until blended.  Spoon half of the mixture over the crust and spread evenly.  To the remaining cream cheese mixture add the pumpkin puree and pumpkin pie spice.  With a wire whisk stir util smooth.  Carefully, spoon over mixture in pan.  Bake the cheesecake in the preheated oven for 50 mins or until just set.  Turn off the oven and leave the door ajar allowing the cheesecake to slowly cool down for about 1 hour or so.  Refrigerate for at least 3 hours before cutting into bars.  Top each bar with whipped cream and a dust of pumpkin pie spice.
