Southwest Quiche

1 refrigerated can of croissant rolls
6 eggs
1 lb sausage, browned
1 cup milk
1/2 cup salsa
salt and pepper to taste
grated cheese (optional)

Lay out he croissant rolls on the bottom of a greased 9x13 pan.   Gently press seams together. Mix eggs, sausage, milk and salsa, pour on top of the croissant dough, sprinkle with cheese if desired and bake 25 minutes at 400 degrees.

Cold Asian Peanut Noodle Salad



Ingredients:
1 package of cooked and cooled linguini noodles, drizzled with a touch of olive oil to prevent sticking                                                                                                                                      1 small package of shredded cole slaw cabbage mix (or half the Sams club size one)        1/2 bunch of chopped green onion                                                                                        1/2 cup peanuts                                                                                                                       1 bunch of cilantro leaves, chopped                                                                                            1 small package of matchstick carrots
• Sweet-Spicy Peanut Sauce 
Sweet Peanut Sauce ingredients:
1/3 cup honey
1/3 cup tablespoons rice vinegar
1/3 tablespoons soy sauce
1/3 peanut or vegetable oil
1/3 cup peanut butter 
1 clove garlic, pressed through garlic press
splashes of sriracha sauce (optional...this is spicy, so use to your liking or taste. I omitted it for club lunch but I usually add it)
Put all ingredients in the blender until creamy and smooth
Combine all ingredients and pour dressing and toss just before serving. 
You can also add cooked chicken to make it more like a meal instead of a side dish.

Biscuit Cheese Bread

Biscuit Cheese Bread


3 cups flour
1T. baking powder
1 tsp. salt
1/4 tsp. cayenne pepper (I used less)
1/8 tsp. black pepper
4 oz. cheddar cheese, cut into 1/4 inch cubes
1 1/4 cups milk
3/4 cups sour cream
3 T. melted butter
1 egg, lightly beaten

Heat oven to 350 degrees.  Grease a 9x5 loaf pan with oil.  In a bowl, whisk together the first 5 ingredients.  Carefully stir in cheese cubes until covered in flour mixture, this will help prevent your cheese from sinking to the bottom of your loaf of bread.

In a different bowl, whisk together the remaining ingredients.  Fold the wet mixture into the flour and cheese mixture, stir until just combined, do not over stir.  Spread the mixture into the loaf pan.  Bake for 45-50 minutes and then remove from pan.  Allow to cool for one hour before slicing and serving.
