Strawberry Pecan Pretzel Salad

  • 1 cup crushed pretzels
  • ½ cup chopped pecans
  • ¾ cup brown sugar
  • ¾ cup butter, melted
  • 2 cups diced strawberries
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla
  • 8 oz whipped topping
Mix together crushed pretzels, chopped pecans, brown sugar and melted butter
 
Spread on a large baking sheet with sides (I used my jelly roll pan) and bake at 400 degrees for 7 minutes. Allow the mixture to cool and then break it into small pieces.
 
Beat together softened cream cheese, granulated sugar and vanilla.
 
Fold in whipped topping.
 
Before serving, stir the diced strawberries and sugared pretzels and pecans into the cream cheese mixture.

Porcupine Meatballs

1-1/2lbs.ground beef
1 c.rice cooked
1/2c. Oatmeal
1 egg, slightly beaten
1/2c. onion chopped
1 can tomato sauce
1/2 c. Dry bread crumbs
1/4 tsp. chili powder
1/2 tsp. seasoning salt
1/4 tsp. black pepper

Pre-heat oven to 350  combine all ingredients mix well.  Form into balls about 2" in diameter. Place in casserole dish.

Sauce

1/2 c brown sugar
1/2 c BBQ sauce
1/2 c ketchup
1 can tomato sauce
1/2 tsp Worcestershire sauce
1/2 tsp seasoning salt
1/2 tsp chili powder

Combine all ingredients and blend well.  Heat and simmer 3 minutes. Pour over meatballs. Bake for 45 min. Makes 6-8 servings.

Crackers with chive and onion cream cheese

slice of cheese
cherry tomato
chopped chives

Sugar Cookies

The Best Valentine Sugar Cookies ~ These are simply the best!:

1 cup butter
2 cups sugar
1 tsp vanilla
2 eggs
Mix together

Sift togherher:
4 cups flour
1/2 tsp salt
1/2 tsp cream of tarter
1 tsp baking powder

Add to other mixture and mix, add 1-2 Tbsp milk to make the right consistency. Bake at 350 for 11 minutes.

Frosting:
6 oz cream cheese
4 TBS butter
1/2 tsp vanilla
3 cups powder sugar
