Carrot Cake

 4 eggs

1 1/2 c. veg oil

2 1/2 c. flour

2 tsp. baking soda

2 tsp. cinnamon

2 c. sugar

2 tsp. salt

2 1/2 c. grated carrots

1/2 c. coconut

1/2 c. marchino cherries or crushed pineapple

Mix together and bake at 350* for 30-35 minutes.


Icing

1 3/4 c. powdered sugar

1 tsp. vanilla

3 oz. cream cheese 

1/2 cube butter
