Ingredients:
Pizza dough:
You can use any pizza dough you like...frozen store bought.
I used my mom's recipe for these loaves
2 cups warm water
1 tbs Instant yeast
2 tbs sugar
2 tsp salt
5-6 cups of flour
Add water, yeast and sugar let sit for 5 minutes. Add remaining ingreedients. Knead for 10 minutes, cover and let rest and raise for 1 hour.
Roll out dough into a big rectangle on counter. I spread pesto, sundried tomatoes, and motzerella cheese to mine. You can put any topping...ie. cheddar and sausage, peperoni and olives...ANYTHING. Just make sure your sauce you spread has an oil base so it will pull apart and not be soggy. You can just brush on olive oil or butter if you want.
With a pizza cutter, cut into small sqaurs and stack them on top of each other.
Place them into mini loaf pans lined with parchment papper.
Let rise for 30-40 minutes. (I doubled the recipe so I would have loaves for my family.)
Bake at 375 for 20 minutes or until golden and puffy. Pull out of the pans and cool on a rack.
